Varies by brand, but generally:
Stage 1: Very similar to stock Stage 2: Firmer and stronger than stock Stage 3: Much firmer, much more difficult to engage and disengage smoothly Stage 4: Race only. You do not want this for the street, your left leg and your passengers will thank you. Extremely harsh engagement, very hard to push down, not what you want to use.

yeah...the stock cluth (stage 1), or stage 2 is what most people should run if they are stock or N/A modded or even Nitrous for that matter...only the heavy Turbo boys run into stage 3
