Hi!
What offset should I choose for a 18x8.5 wheel without sticking out from the body?
Would it even fit without rubbing anything?

Hi. I have 18x9.5 +35 in the back and +40 in the front, and they are relatively flush. They rub a little at full crank, but your 8.5s should be fine with an offset of +30. Another thing to consider is your tire size, I would recommend sticking to a lower-profile tires.
