I will only do carbon fibre if i get a minimum of 5 people who want c/f, so that i can order the c/f all at once, and i would require nonrefundable deposits on carbon fibre inserts. First though, we need to find a set of door panels that i can mold, without worrying about ruining my newly custom interior

Basically, the groove around the "insert" is just cast into the door panel, it's not a seperate piece. The new Fiberglass insert will fit into the groove tightly, hopefully without the need for any kind of adhesive.

The leather inserts are attached by some sort of Adhesive. There is no way to remove them unless you peal them off. However, your question was How do you get the door panels off? not How do you detach the leather inserts from the door panels? Here are some pics

I will begin working on the prototype for the insertsas soon as i recieve the door panels, and should have them ready to go into production a week or two afterward. There will be a carbon fibre version available, but not until after the Fiberglass ones are done.
